Roasted Carrots with Hummus, Feta + Pepitas
1- small bunch of small carrots
1/2c Hummus
1/4c. Pepitas
1/4c Feta cheese
Drizzle of honey
Snip the greens off and peel a single bunch of small carrots
Oil a baking sheet and spread carrots out
Season with Mediterranean spices
Bake @425 for 20 minutes or tender
Let rest for 5 minutes
Roast 1/4 c pipitas in a skillet on medium heat with oil and salt *Only roast until turning brown
Smear Hummus across a large serving plate
Spread carrots over hummus
Sprinkle with 1/2-1c feta cheese
Top with roasted pepitas
Drizzle with honey
