Avocado Egg Nests

Breakfast is the most important meal of the day! Here is a delicious, protein-rich, quick and easy recipe that is versatile enough to be modified with different toppings that keep these little avocado eggs interesting.


2 avocados (halved and pitted)
4 eggs                                                                                                                                                               

Toppings: Embellish with your favorite flavors, here are some ideas...

Bacon and Chives 
2 slices of bacon (cooked and crumbled)
chopped chives

Tomato Basil Salad
1 cup cherry tomatoes (halved)
1/2 cup fresh basil leaves (torn)
2 tablespoons Olive Oil
1 lime (grated zest and juice)

In a medium bowl, mix together the tomatoes, basil, lime zest and juice, and 2 tablespoons olive oil. Season with salt and pepper. 


Cut the avocado in half. Scoop out the avocado so the hole matches the size of your eggs. If you don't do this, the eggs will spill out onto the cookie sheet and make a mess. Crack an egg into each half of the avocado, resting the edge of the avocado on the side of the cookie sheet. This helps keep it stable so the avocado doesn’t roll and spill the egg.  (With Bacon: Add the pieces of bacon to the top) and place in the oven at 425 degrees for 15 minutes. You can adjust this based on how you like your eggs cooked. Plate your avocado eggs and top with Tomato Basil Salad, Chives, some Salt and Pepper, Salsa, Hot Sauce, or create toppings of your own….
