Black Bean Buddha Bowl

Buddha Bowls are basically a cute name for super-protein vegetarian burrito salad bowl.  The base is beans and rice or quinoa and the rest is up to your imagination or current refrigerator stock of produce.  Here is a recipe to get you started!

Makes 2 servings

2 cups cooked brown rice

1 can black beans, drained and rinsed

1 red bell pepper, chopped

2 cups spinach, chopped

1 avocado

2 tbsp salsa

1 tsp garlic powder

1 tbsp chili powder

1 tbsp nutritional yeast

1 tsp cayenne powder

1 tbsp water

pinch of sea salt

Drain and rinse the black beans. In a pot, add beans, salt, nutritional yeast, and spices on medium high heat. Add in the water and stir until heated and mixed together thoroughly. In a bowl (or two), add half of the beans, rice, spinach, peppers, salsa, and avocado.
